Warm the oil and garlic in a small pan over the lowest heat until the slices barely fizz, about 5 min — pull it before they colour, or the whole batch turns bitter. Stir in the salt and the pepper flakes if you're using them, and let it cool. Brush it on thin; a white pie wants a sheen, not a puddle. Keeps refrigerated 1 week.

  1. BeforeBrush the dough with the garlic oil, cover with the mozzarella, tear the American cheese over it and scatter the bacon.
  2. DuringOnce the cheese has melted, about halfway through, crack the eggs into the gaps and bake until the whites have set.
  3. AfterSalt and pepper the eggs, scatter the chives, and add ketchup or hot sauce the way you'd take the sandwich.
